Nada's Braised Chicken Enchiladas Meal | Serves 4
Chef Falk's wife's favorite dish! Braised chicken, sweet corn, black beans, and chihuahua cheese in flour tortillas. Served with Nada's signature salsa trio & chips and a green goddess bibb salad.
Difficulty: So easy!
Time: 40 min.
Preheat the oven to 425° & prepare to cook on the middle rack. While the oven is preheating, unpack the rest of your meal.
Remove the plastic cover & place the foil-covered pan of enchiladas on a sheet tray on the middle rack in the oven & cook for 20-25 minutes. Carefully remove the foil & place the uncovered pan back in the oven for 5-10 more minutes until the cheese is golden. You know your oven best; cook time may vary, but you’re looking for hot bubbling sauce on the edges of the pan.
While the enchiladas are finishing in the oven, remove the bibb lettuce from the container & place on a large plate. Cut as desired & garnish with green goddess dressing, pickled red onions, and half of the scallions, & ancho-crusted pepitas.
Remove enchiladas from the oven, drizzle the top
with crema & Nada hot sauce, & garnish with theremaining scallions. Plate & serve enchiladas with finished green goddess bibb salad & chips & salsa.
