Beer-braised & seasoned with aji chiles, achiote, fresh ginger & smoked paprika in a chicken brodo.Difficulty: So easy!
Time: 60 min.
Preheat the oven to 400° & prepare to cook on the middle rack. While the oven is preheating, set the pan of chicken on the counter for 20 minutes before cooking. Remove the plastic lid, & place the pan of chicken on a sheet tray into the oven, on the middle rack for 25-30 minutes. You know your oven best; cook times may vary, but you're looking for the chicken to be cooked through. Remove the chicken from the oven & rest for 10 minutes. Slice the chicken & serve with warm brodo sauce from the pan. Enjoy!
