Step 1

Preheat the oven to 375°. While the oven is preheating, unpack your delivery. Remove the plastic cover from the enchiladas. Remove the empanadas from the packaging, and lay the out in a single layer on a lined sheet tray.

Step 2

Place the foil-covered pan of enchiladas on a sheet tray, onto the middle rack in the oven, & cook for 25-30 minutes. Carefully remove the foil from the enchiladas & cook for another 5-10 minutes. You know your oven best; cook time may vary, but you’re looking for bubbling sauce on the edge of the pan & golden cheese on top of the enchiladas.

Step 3

Remove the enchiladas from the oven & allow them to rest for 10 minutes. Place the empanadas in the oven on the middle rack & cook for 8-10 minutes. Gently heat the queso in a saucepan on the stove over medium heat until bubbling, continuously stirring.

Step 4

Remove the empanadas from the oven & turn the oven temperature down to 350°. Place the cookies on a lined sheet tray, with pan spray, & bake on the middle rack for 12-15 minutes - until edges are crispy. Drizzle the enchiladas with crema & hot sauce, then garnish with half of the scallions. Top the queso with the remaining scallions. Serve queso & salsas with chips. Serve the empanadas with the housemade bleu cheese for dipping.

Chef tip: Try mixing queso and kreeper salsa together!
