Game Day Party Pack | Serves 6

Step 1: Preheat oven to 375°. While oven is preheating, unpack the rest of your meal. Remove the plastic cover from the enchiladas & lay the empanadas out in a single layer on a lined sheet tray.

Step 2: Place the foil-covered pan of enchiladas on a sheet tray on the middle rack in the oven & cook for 25-30minutes. Carefully remove the foil from & cook for another 5-10 minutes. You know your oven best; cook time may vary, but you’re looking for bubbling sauce on the edge of the pan & golden cheese on top of the enchiladas.

Step 3: Remove the enchiladas from the oven & allow to rest for 10 minutes. Place the empanadas in the oven, on the middle rack & cook for 8-10 minutes. Gently heat the queso in a saucepan on the stove over medium heat until bubbling, continuously stirring.

Step 4: Remove the empanadas from the oven & turn the oven down to 350°. Place the cookies on a lined sheet tray with pan spray & bake on the middle rack for 12-15 minutes until edges are crispy. Drizzle the enchiladas with crema & hot sauce, then garnish with half of the scallions. Top the queso with the remaining scallions. Serve queso & salsas with chips. Serve the empanadas with the housemade bleu cheese for dipping.
